PINEAPPLE YAM BREAD | |
1 1/2 c. brown sugar, packed 1 c. butter, softened 1 (8 oz.) can crushed pineapple, undrained 1 c. cooked mashed yams 3 eggs 3 c. flour 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. nutmeg 1 1/2 c. raisins Cream sugar and butter until fluffy. Beat in pineapple, yams, and eggs. Mix well. Add flour, soda, and spices and mix well. Stir in raisins. Grease and flour 2 loaf pans. Pour in butter. Bake at 350 degrees about 50 minutes or until bread tests done. Turn onto wire racks to cool. (You may add chopped nuts if desired.) |
