PINEAPPLE NUT BREAD 
3/4 c. brown sugar (packed)
3 tbsp. soft butter
2 eggs
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 can (8 oz.) crushed pineapple and juice
3/4 c. chopped walnuts
1/2 c. raisins
2 tbsp. sugar
1/2 tsp. cinnamon

Cream sugar, butter and eggs. Sift dry ingredients together. Stir into cream mixture. Blend in nuts and raisins. Pour into greased and floured 9x5 inch loaf pan or 2 - 7 1/2 x 2 1/4 inch loaf pans. Mix sugar and cinnamon together and sprinkle on top. Bake 350 degree oven 60 minutes for large loaf or 40 minutes for small loaves.
