PINEAPPLE ZUCCHINI BREAD 
3 eggs
1 c. salad oil
1 c. sugar
2 tsp. vanilla
2 c. shredded zucchini
! can (8 oz.) crushed pineapple, drained
1 c. chopped walnuts
1 c. raisins
3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
2 1/2 tsp. cinnamon
3/4 tsp. nutmeg

Preheat oven to 350 degrees. Grease 2 loaf pans. Beat eggs well. Add salad oil, sugar and vanilla. Beat well. Stir in zucchini and pineapple. Combine remaining dry ingredients and stir gently into zucchini mixture. Divide batter into 2 loaf pans and bake at 350 degrees for 1 hour.

Can substitute 1 cup whole berry cranberry sauce or 1 cup chunky applesauce if desired.
