PINEAPPLE ZUCCHINI BREAD | |
3 eggs 1 c. salad oil 2 tsp. vanilla 2 c. coarsely shredded zucchini (remove seeds) 1 (8 1/4 oz.) crushed pineapple (drained well) 3 c. flour 2 tsp. baking soda 1 tsp. baking powder 2 tsp. cinnamon 1 c. chopped nuts 1 c. raisins Beat eggs. Add oil, sugar and vanilla. Stir in zucchini and pineapple. Combine flour, soda, salt, baking powder, cinnamon, nuts and raisins. Stir gently into zucchini mixture. Pour into 3 greased pans (9 x 5 inches). Bake at 350 degrees 1 hour until done. |
