SPINACH A LA CREME 
2 (10 oz.) pkg. frozen chop spinach, cook according to directions
1/2 c. minced onion
2 cloves garlic, crushed
4 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1 c. sour cream (room temperature)
5 slices bacon, fresh crumbled
1 1/2 c. Cheddar cheese, top

Cook spinach according to directions. Drain VERY WELL. Saute onion and garlic in butter until tender. Stir in flour and cook and cool 1 minute. Add drained spinach and salt. Cook, stirring over low heat until very thick.

Remove from heat. Add sour cream all at once and blend. Fold in crumbled bacon. Top with cheese. Heat gently to serving temperature. 6 servings.
