FRIED PLANTAIN IN BUTTER 
12 ripe plantain
1/4 c. coconut oil
1 lb. butter
Juice of 4 lemons
Sugar

Peel the plantain with a small, sharp knife. Slice the plantain lengthwise into 4 pieces. Place butter and oil together in a heavy skillet. Heat until very hot. Place plantain pieces, one by one, in the skillet and fry them for about 4 minutes on each side, turning only once. Drain on paper towels. Place in a serving dish and sprinkle with lemon juice and sugar.
