RED CABBAGE BELGIAN STYLE 
1 med. red cabbage, shredded
1 med. onion, chopped
3 lbs. red apples, peeled, cored & chopped
3 to 4 tbsp. vinegar
Salt & pepper to taste
Pinch of nutmeg
1 bay leaf
1 1/4 c. white sugar

Saute onion in butter in large kettle. Add all remaining ingredients. Simmer and stir frequently for 3 to 3 1/2 hours. Remove bay leaf after one hour.
