MEXICAN LASAGNA | |
1 1/2 lbs. ground beef 1 tsp. salt 1/2 pkg. taco seasoning 1 c. fresh tomatoes, diced 2 (8 oz.) cans tomato sauce 1 (4 oz.) can diced green chiles 8 oz. (2 c.) ricotta cheese 2 eggs 9 corn tortillas 10 oz. (2 c.) Jack cheese, shredded Brown beef in skillet until crumbly. Drain fat. Add salt, taco mix, tomatoes, tomato sauce and chiles. Bring to boil. Reduce heat and simmer, uncovered 10 minutes. In small bowl, combine ricotta cheese, eggs. In bottom of 9x13 inch baking dish, spread half of mixture. Top with half of tortillas, spread half of Jack cheese. Repeat once more, ending with grated cheese. Bake uncovered at 350 degrees for 20-30 minutes. Let stand 10 minutes. Before cutting into squares. Makes 8 servings. |
