ZUCCHINI VEGETABLE CASSEROLE 
2-4 cucumber size zucchini
1/2 lg. pepper
Few tbsp. chopped onion
1 slice cucumber, sliced
Seasoned croutons
3-4 med. or lg. tomatoes, wedged

Put a little oil on bottom of non-stick fry pan. Turn and cook vegetables slowly until starting to soften. Place vegetables in casserole. Then top with seasoned croutons. Bake 1/2 hour. May serve with meat.
