ZUCCHINI VEGETABLE DISH 
Raw, sliced thin zucchini
1/2 c. sour cream
1 tbsp. butter
1 tbsp. chives
Salt
Paprika
Ritz crackers
Velveeta cheese

Cook zucchini until tender. Drain. Cut Velveeta into wide strips. Melt over low heat Velveeta nd sour cream. Add chives, salt and paprika. Crush Ritz crackers and toss in melted butter. Layer zucchini in casserole, top with cheese sauce and then buttered crackers. Bake at 350 degrees for 20 minutes.
