CHINESE ALMOND COOKIES 
2 c. flour
1/2 tsp. baking soda
3/4 tsp. baking powder
1 egg
1/2 lb. lard
1/2 c. packed brown sugar
1/2 c. white sugar
1/2 tsp. almond extract
Blanched almonds
1 or 2 egg yolks

Beat egg and lard, add sugars and extract. Gradually mix in dry ingredients. Roll 1 tablespoon to make ball, place on ungreased sheet and press almond in center. Brush with beaten egg yolk and bake at 350 degrees for 15 to 20 minutes.
