MICROWAVE MUFFIN BREAD 
4 1/2 to 5 c. flour
2 (1/4 oz.) dry yeast
1 tbsp. sugar
2 tsp. salt
2 c. milk
1/2 c. water
2 to 3 tbsp. butter, melted

Combine 3 cups flour, yeast, sugar and salt in large bowl. Warm milk and water in microwave for 1 to 1 1/2 minutes on high. Stir into flour mixture. Beat until smooth. Stir in enough flour to make stiff batter. Cover bowl, place in warm place, let rise until light and doubled (1 to 1 1/2 hours). Stir down. Divide between 2 greased, microwave safe, loaf dishes. Cover and let rise until doubled (about 1 1/4 hours). Cook 6 1/2 minutes on high per loaf. brush top with butter. Cook 5 minutes. Remove from dish. Brush sides and bottom with butter. Slice and toast.

Since microwave ovens vary in power, you may need to adjust your cooking time.
