MEXICAN RICE 
2 tsp. vegetable oil
1 lb. ground meat
1 c. Uncle Bens rice
1/2 c. green pepper
1/2 c. chopped onion
1/4 c. celery
1 lg. clove garlic, chopped
2 c. water
1 tbsp. chili powder
1 c. grated cheese
1 sm. can tomato sauce
1 lg. tomato, diced

In skillet, combine ground meat, oil, green pepper, onion, celery, garlic, chili powder (use salt and pepper to taste). Cook until meat is browned, stirring occasionally. In a pot, combine water; bring to a boil. Add rice and meat mixture and tomato sauce (stir in tomato sauce). Cover and cook until rice is done (simmering for 35 to 40 minutes). When mixture is done, add grated cheese of mixture, then tomatoes. Put top back on pot and let set 20 minutes until cheese is melted. Then serve.
