MANDARIN ORANGE CAKE | |
1 box yellow cake mix without pudding 4 eggs 1/2 c. vegetable oil 1 (11 oz.) can mandarin oranges, undrained Combine cake mix, eggs, and oil in a large mixing bowl. Add mandarin oranges. Beat just until combined. Pour batter evenly into 3 greased and floured 8 inch round cake pans. Bake at 350 degrees for 20 to 25 minutes. Cool in pans 10 minutes. Spread frosting between layers and on top and sides of cooled cake. PINEAPPLE FROSTING: 1 (3.5 oz.) box vanilla instant pudding mix 1 (20 oz.) can crushed pineapple undrained 1 (8 oz.) carton frozen whipped topping (thawed) Combine pudding and pineapple, beat at medium speed until well blended. Add whipped topping. Mixing well. Spread over cake. NOTE: This can also be baked in a 9 x 13 inch pan. |
