RICE PUDDING 
4 1/2 c. milk
1/2 c. rice
1/3 c. sugar or sugar substitute equivalent suitable for baking
1/4 tsp. salt
1 egg beaten
1 tsp. vanilla
1 tsp. almond extract
1 c. nondairy whipped topping
2 c. fresh fruit (strawberries)

Put milk in a pot and add rice, sugar, salt and bring to a boil. Then reduce the heat and simmer for 1 hour. Take off the heat. Beat the egg and add some of the rice mixture then return mixture back to the pot of rice and put it back on the heat for 1 minute. Remove from the heat and add the extracts. Refrigerate for 2 hours. Take out of the refrigerator and fold in the nondairy topping. Top with fresh fruit and serve.
