PANCAKES 
1 1/2 c. presifted flour
1/2 tsp. salt
1 1/2 tbsp. sugar
1 3/4 tsp. double-acting baking powder
2 eggs, beaten lightly added to 1 1/4 c. milk
3 tbsp. oil

Sift your flour before measuring. Combine the flour, salt, sugar, and baking powder; sift again. Set dry ingredients aside. Now gently beat 2 eggs and add to the milk in a bowl. Stir the milk and eggs together and pour into the flour mixture. Only stir it a little. Add the 3 tablespoons of oil. Stir quickly but only a little - some lumps are ok. Wait for the pancake griddle to get hot enough and pour 4 inch pancakes out. Turn them over when the bubbles start to pop.
