JOE'S SOURDOUGH WAFFLES 
2 c. unbleached flour
2 c. lukewarm water
1 c. sourdough starter
2 level tbsp. sugar
1 tsp. salt
1/2 tsp. baking powder
5 tbsp. cooking oil
3 eggs
1/2 tsp. baking soda, dissolved in 1 tbsp. water

Begin preparation at least 8 to 10 hours before. Add flour and water to sourdough starter in a non-plastic, covered container. Beat until smooth and let stand in a warm place, preferably overnight. When ready to prepare batter, remove 1 cup of starter, cover and refrigerate for later use. To remaining batter add and blend in sugar, salt, baking powder and oil. Beat in eggs. Gently fold in dissolved soda. Do not stir after baking soda is added. Let batter rest while grids heat. Spread batter on lightly greased, very hot preheated waffle grids. Cook about 5 to 6 minutes. Repeat. Makes 4 to 6 servings.

NOTE: Sourdough starter may be prepared by combining 2 cups unbleached flour, 2 cups lukewarm water, 1 teaspoon salt, 1 tablespoon yeast and 3 tablespoons sugar into a smooth paste. Store tightly covered in refrigerator until ready to use.
