MEAT BALL DINNER 
3 slices bread
1/2 c. milk
1 beaten egg
1 lb. ground beef
3 tbsp. grated onion
1 tsp. salt
1/8 tsp. pepper
2 c. tomato juice
1 c. water
1/2 c. chopped carrots
1/8 c. chopped celery
1 tsp. Kitchen Bouquet
1/2 tsp. salt

Soften bread in milk; add the egg. Mix ground beef, onions, 1 teaspoon salt and the pepper. Combine bread and meat mixtures; form into 18 balls; roll in flour.

In skillet, brown balls in 2 tablespoons hot shortening; drain off excess fat. Add 2 cups tomato juice, the water, carrots, celery, Kitchen Bouquet, and 1/2 teaspoon salt. Cover and simmer 45 minutes. Serve sauce and meatballs with rice or mashed potatoes. Makes 6 servings.
