OVEN-FRIED CHICKEN 
1/2 c. flour
2 tsp. salt
1 tsp. paprika
1/4 tsp. pepper
2 1/2 to 3 1/2 lb. cut-up fryer
1/4 c. oil or 1/2 stick butter

Heat oven to 400 degrees. Put 8x12 inch pan with the oil in the oven as it heats. Combine flour with seasonings. Coat chicken. Place chicken skin side down in hot pan. Bake uncovered 30 minutes, turn and bake 30 more minutes. Serves 4. May skin chicken and reduce oil to half.
