LEMON FISH ROLL-UPS 
1/3 c. butter
1/3 c. lemon juice
2 tsp. salt
1/4 tsp. pepper
1 1/3 c. cooked rice
4 oz. shredded sharp Cheddar cheese
1 (10 oz.) pkg. frozen chopped broccoli, thawed
8 fish fillets
Paprika

In small saucepan, melt 1/3 cup butter. Add 1/3 cup lemon juice, 2 teaspoons salt and 1/4 teaspoon pepper.

In medium bowl, combine 1 1/3 cups cooked rice, 4 oz. shredded sharp Cheddar cheese, 1 package frozen broccoli, thawed and 1/4 cup of the lemon juice mixture. Divide among 8 fish fillets, roll up and place seam side down in baking dish.

Top with remaining sauce and paprika. Bake at 375 degrees for 25 minutes.
