FISH FILLETS WITH LEMON DRESSING 
4 fillets of firm textured white fish
2 tbsp. grated or minced onion
1 tbsp. celery, finely chopped
4 tbsp. oil
4 slices toast, cubed
Juice of 1 lemon
Grated rind of 1/2 lemon
Pepper
Paprika
butter

Saute onion and celery in oil. Mix in remaining ingredients. Place 2 fillets on bottom of an oiled baking dish. Spread dressing over fish and top with other 2 fillets. Dust with paprika, dot with butter and bake at 375 degrees for 20 minutes or until fish flakes with a fork.
