LEMON TARRAGON FISH 
1/4 c. olive oil
2 tbsp. lemon juice
1 tsp. tarragon
1/2 tsp. salt
1/2 tsp. pepper
1 lb. fish fillets

Place fillets in broiler pan. Combine ingredients in small bowl, mix vigorously. Spread half of paste on fish. Broil 6-8 minutes, basting at about 5 minutes. Serve on the warmed plates.
