6 lg. Vidalia onions 1 c. uncooked long-grain rice 2 c. water 1/2 c. butter 2 tbsp. minced parsley 1/4 tbsp. salt 1/4 tbsp. white pepper 1 c. (4 oz.) shredded Swiss cheese 1 c. whipping cream (or chicken broth and powdered milk) Paprika Cook rice. Peel and chop onions. Saute in butter about 15 minutes until clear. Stir in rice, parsley, salt, pepper, cheese, whipping cream. Cover and bake at 350 degrees for 30 minutes. Sprinkle with paprika. Use 13x9x2 baking dish. Yield: 10-12 servings. |
