JALAPENO HOT RICE 
1 med. onion, chopped (about 1/2 c.)
1 med. size green pepper, chopped
2 jalapeno peppers, seeded and finely chopped
1/4 c. butter, melted
1 (4 oz.) can mushroom stems and pieces, undrained
1 (10 3/4 oz.) can chicken broth, undiluted
1 c. uncooked rice

Saute onion, green pepper and jalapeno pepper in butter in a medium saucepan until tender. Add mushrooms, chicken broth, and rice; cover and simmer 15-20 minutes or until rice is tender. 4 servings.
