JALAPENO BLACK EYE PEA AND RICE
CASSEROLE
 
1/2 c. chopped onion
1 lb. ground beef
2 (15 oz.) cans Jalapeno black eye peas
2 c. cooked rice
1 (16 oz.) can tomatoes, drained and chopped
1 c. Cheddar cheese, grated

Brown ground beef with onion. Add peas, rice and tomatoes. Mix well. Spoon mixture into 2 quart casserole. Sprinkle cheese over top. Bake at 350 degrees for 20 minutes or until cheese is melted.
