JALAPENO RICE 
1 1/2 - 2 c. uncooked rice
16 oz. sour cream
4 oz. can green chilies, chopped
6 oz. cheddar cheese
6 oz. Monterey Jack

Cook rice according to directions. Layer 1/4 of rice in bottom of casserole dish. Spread 1/4 of sour cream over rice. Sprinkle with green chilies. Top with grated cheddar and Monterey Jack cheese. Repeat layers ending with cheese on top. Bake at 350 degrees for 30 to 40 minutes.
