PAULINE'S FRESH APPLE CAKE 
2 c. sugar
1 c. Wesson oil
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
2 tsp. baking powder
1 tsp. vanilla flavoring
3 cooking apples, peeled and chopped fine
1 c. chopped nuts
2 eggs

Mix sugar and oil; add eggs. Mix flour, soda, salt, baking powder and add to mixture. Stir in vanilla, nuts, and apples. Put in 9 x 13 inch pan. Bake at 350 degrees for 1 hour. Cut in squares. May be topped with ice cream or whipped cream.
