BUD'S PEPPER STEAK 
2 lbs. round steak (eye of chuck or sirloin) cut across grain
2 tbsp. oil
1 med. onion, chopped
4 beef bouillon cubes, plus 3 cups water
1/2 tsp. salt
3 tbsp. cornstarch
4 tbsp. soy sauce
1/4 tsp. black pepper
2 med. tomatoes, cut in wedges
2 med. bell peppers, cut in strips
1 tsp. Worcestershire sauce
1 jar sliced mushrooms, optional

Brown steak in oil. Add onion and cook until clear, stirring frequently. Add bouillon and water. Simmer covered until meat is partially tender. Stir in mixture of soy sauce and cornstarch. Add remaining ingredients except mushrooms, and simmer covered until meat reaches desired tenderness. Add the mushrooms the last 15 to 20 minutes. Serve over rice.
