CHINESE PEPPER STEAK 
1 lb. lean round steak
2 tbsp. butter
2 cloves, crushed garlic
1 tbsp. paprika
1 1/2 c. beef broth
1 c. sliced green onions
2 green peppers, cut into strips
1/2 c. water
2 tbsp. cornstarch
1/4 c. soy sauce
1 lg. tomato, cut into 8ths

Sprinkle meat with paprika. Brown meat in butter. Add garlic and broth. Cover and simmer for 30 minutes. Stir in onions and green peppers. Cover and cook 5 minutes. Blend water, cornstarch, and soy sauce, stirring until clear and thickened. Add tomatoes and stir gently. Serve on bed of hot rice or Chinese noodles.
