NECTARINE UPSIDE DOWN CAKE 
3/4 c. brown sugar
3 nectarines (1 lb.), sliced
3/4 c. sugar
6 tbsp. butter
1 1/2 tsp. baking powder
3/4 c. milk
1 tsp. vanilla
1/4 tsp. almond extract
1 egg
1 1/3 c. flour
1/2 tsp. salt

Heat oven to 350 degrees. Spread brown sugar in bottom of 9" cake pan. Arrange sliced nectarines on top of brown sugar. At medium speed, beat sugar and butter until light in color. Beat in vanilla, almond extract and egg. Combine flour, baking powder and salt. Stir into butter mixture in 3 batches, alternating with milk. Spread cake batter over nectarines. Bake until toothpick comes out clean, about 40 minutes. Invert onto serving plate. Let stand 2 minutes before removing from pan. 345 calories, 10 g fat, 53 mg cholesterol.
