KELLY'S SPICY TURKEY BURRITOS | |
I made this meal by accident, using ingredients I had around the house. It is the best tasting ground turkey I've had! I wrapped up the extra meat mixture into burritos and put them in the freezer for another day. Enjoy! 1 lb. ground turkey 1 pkg. taco seasoning 2 cloves garlic, minced 1 (14 oz.) bag frozen "Southwest style" blend vegetables (corn, black beans, poblano peppers, onions, etc.) 1 jalapeno, diced (or small can diced jalapenos with juice reserved) 2-3 tbsp. lime juice 6-8 whole wheat tortillas 1 cup shredded cheese (Mexican "fiesta" blend works good) 1 tbsp. oil (optional) Heat oil in pan over medium-high heat and add ground turkey to brown, stirring to break up into small bits. When turkey is no longer pink, add taco seasoning according to package. When combined, add in minced garlic and cook about 2 minutes. Add frozen vegetables, diced jalapeno and juice (if reserved), and lime juice. Stir to combine and cook until vegetables are heated. When mixture is heated through, wrap tortillas in damp paper towel and microwave 30 seconds until warm. Sprinkle with cheese and top with ground turkey mixture. Roll up and enjoy!
