SHRIMP JAMBALAYA 
1/4 c. shortening
1 1/2 c. raw rice
3 c. shrimp
2 tsp. salt
1 c. chopped shallots
1 c. chopped green pepper
1 clove garlic
3 c. water

In a large skillet or pot heat shortening. Add rice and stirring until rice is golden brown. Add shrimp and seasoning. Cook on low heat for 5 minutes. Continue to stir. Add water; mix well. Cover and cook, low heat, for 30 minutes or until rice is fluffy.
