NOODLE PUDDING | |
4 c. fine egg noodles 1/2 c. sugar 1/2 c. milk 1/2 tsp. vanilla 1 c. raisins 1 c. whipping cream 1 tsp. cinnamon 3 eggs, beaten 1 c. sour cream 1/2 tsp. salt 2 c. apples, peeled & chopped 1/2 c. walnuts, chopped 1 tbsp. sugar Cook noodles to desired doneness as directed on package; drain and rinse under hot water. Heat oven to 350 degrees. Butter a 2 quart casserole. In large bowl, combine eggs, sugar, sour cream, milk, salt and vanilla. Stir in apples and raisins. Fold in cooked noodles. Pour mixture into prepared casserole. Top with nuts. Place casserole in 9"x13" pan; pour hot water into pan about 1" deep. Bake at 350 degrees for 75 minutes or until set. Test as for custard. Let stand 10 to 14 minutes before serving. In small bowl, beat cream until soft peaks form. Fold in sugar and cinnamon. Serve with warm pudding. Yield: 12 servings. |
