CANNOLI FILLING 
1 1/2 c. Ricotta cheese
1/2 c. sifted confectioners' sugar
1/4 tsp. vanilla
2 oz. bittersweet chocolate chips
1 tbsp. diced candied fruits
Dash of cinnamon

Combine Ricotta cheese and confectioners' sugar thoroughly (hand mix), then add 1/4 teaspoon of vanilla and the chocolate chips and the diced candied fruits and cinnamon. Mix well and refrigerate. Fills 6 shells. Shells can be purchased at many grocery stores or your local Italian bakers.
