CHEESY VEGETABLE CASSEROLE 
2 (10 oz.) pkg. frozen mixed vegetables
1 c. chopped celery
1 c. mayonnaise
1/2 c. (4 oz.) shredded sharp Cheddar cheese
1/3 c. chopped onion
1/4 tsp. salt
1/8 tsp. pepper
2 c. bite-size Cheddar cheese crackers, crushed
1/4 c. butter, melted
1/2 c. (4 oz.) shredded Cheddar cheese (sharp)

Cook frozen mixed vegetables according to package directions. Do not overcook. Drain well. Combine cooked vegetables, celery, onion, mayonnaise, 1/2 cup cheese, salt and pepper. Spoon into a greased 2 quart casserole. Combine remaining ingredients and sprinkle over top. Bake at 300 degrees for 30-40 minutes.
