ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. zucchini, peeled and grated
1/4 tsp. baking powder
2 tsp. vanilla
2 c. walnuts
3 c. flour
1 tsp. baking soda
1 tsp. salt
2 tbsp. cinnamon

Beat eggs; gradually add sugar, then oil. Combine dry ingredients; add to egg mixture alternately with zucchini. Stir in vanilla and walnuts. Bake at 350 degrees for 45 minutes. Let stand 10 minutes. Turn out on wire rack to cool. May freeze. Good!
