ZUCCHINI NUT BREAD 
2 tsp. vanilla
3 eggs
2 cups sugar
1 cup canola oil
1 1/2 cups grated zucchini
1/2 cup grated carrot
3 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. cinnamon
1 cup chopped walnuts

Blend eggs, sugar, oil and vanilla. Add zucchini and carrot. Add flour, salt, baking soda, baking powder and cinnamon. Stir in nuts. Pour into two greased and floured loaf pans.

Bake at 325°F for 1 hour.
