CARROT CASSEROLE 
6 to 8 carrots, grated
1 med. onion, grated
3 eggs, well beaten
1/2 c. melted butter
1/4 c. sour cream
1/4 c. cottage cheese
1/4 c. Matzo Meal (or cracker crumbs)
1 tbsp. sugar
Salt & pepper to taste
Grated cheddar cheese

Combine all ingredients except cheese. Pour into well greased casserole. Sprinkle top with cheese; dot with additional butter. Bake at 350 degrees for 1 hour or until center is set. Serves 10 to 12.
