6 med. potatoes, well scrubbed & dried
1/4 c. butter
1 lg. onion, cut in sm. chunks
1 garlic clove, split (optional)
Salt, pepper, celery seed & paprika (season to taste)

Cut unpeeled potatoes into 1 1/2 inch chunks. Arrange in single layer in shallow 9 x 13 inch baking pan, with onion chunks tucked in between.

Melt butter with garlic halves. Remove garlic, drizzle butter on potatoes. Sprinkle layer with salt, pepper and celery seed. Cover with foil and bake 45 minutes in 400 degree oven. Remove foil, sprinkle with paprika and continue baking, about 20 minutes until tender and well browned. Serves 6-8.
