SPINACH QUICHE PIE 
Crust:

1 1/2 cups grated cheddar cheese
3/4 cup flour
1/2 teaspoon salt
1/4 teaspoon dried mustard
1/2 cup melted butter (let cool)

Mix the crust ingredients together. Knead and press into a pie pan. Set aside.

Filling:

1 package (10 oz.) frozen chopped spinach, cooked and drained
1/2 cup milk
1/2 cup half and half
1/4 cup chopped onion
1 teaspoon salt
1/2 teaspoon nutmeg
1 diced pepper

Preheat oven to 400°F.

Mix the filling ingredients in a saucepan. Heat while stirring constantly. Do not boil. Add three eggs slightly beaten that are at room temperature. Stir. Add the spinach and stir gently. Pour this mixture into your crust pan.

Bake pie for 15 minutes, reduce oven temperature to 325°F and bake for an additional 25 minutes.
