CHOCOLATE-ORANGE MUFFINS 
2 oranges, well scrubbed and wiped
3 oz. bittersweet chocolate
1 c. granulated sugar
1/2 c. butter, room temperature
2 lg. eggs
1/2 c. orange juice
1/2 c. plain yogurt or buttermilk
2 c. all purpose flour
1 tsp. baking powder
1/2 tsp. baking soda

Heat oven to 375 degrees. Grease 12 regular size (10 if you want large muffins muffin cups or line with paper or foil baking cups. Finely grate orange peel. Chop chocolate into small pieces with a large knife. Using a wooden spoon or electric mixer, beat sugar and butter in a large bowl until pale and fluffy. Add eggs, one at a time, beating well after each.

Add orange peel, orange juice and yogurt. Mix very well. Batter will be quite liquid. Mix flour, baking powder and baking soda. Sprinkle flour mixture, then chocolate over the batter. Fold gently just enough to blend in the flour. Spoon into prepared muffin cups. Bake 20-25 minutes or until golden brown and springy to touch. Turn out onto a rack. Makes 12 regular size muffins, 10 large regular size muffins.
