POTATO CRUST QUICHE 
1 pkg. frozen hash browns, thawed
1 c. minced onion
1 tbsp. salt
pepper
2 eggs
1/2 to 3/4 c. flour
2 c. shredded cheese
8 eggs
1 tsp. salt
pepper
2 c. milk
diced ham, cooked bacon or sausage

Mix first 6 ingredients together and press into a greased 9 x 13 pan.

Bake at 400°F for 25 to 30 minutes until potato edges brown a little bit. Decrease oven to 350°F. Mix next 6 ingredients together. When crust is done, pour mixture on top and bake another 35 minutes or until set.
