OLD-FASHIONED SOFT PUMPKIN
COOKIES
 
These cookies are something different and great for after school with a big glass of milk.

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups granulated sugar
1/2 cup butter (1 stick), softened
1 cup LIBBY'S® 100% Pure Pumpkin
1 large egg
1 teaspoon vanilla extract
Glaze (recipe follows)

PREHEAT oven to 350°F. Grease baking sheets.

COMBINE flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto prepared baking sheets.

BAKE for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Glaze over cookies.

GLAZE:

COMBINE 2 cups sifted powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter and 1 teaspoon vanilla extract in small bowl until smooth.

Cooks Note: For a variation add 1/2 cup chocolate chips or nuts to the recipe.

Estimated Times: Preparation - 10 minutes; Cooking - 18 minutes; Cooling Time - 2 minutes cooling.

Yields 36 cookies.

Wondering if I cut the sugar to 1 cup would that affect the baking of the cookie? Curious. Have made them several times but am looking to cut down on that sugar, especially since it has a glaze. Thanks!

My Kids found this recipe on the Libby's Pumpkin label roughly 25 to 30 years ago and have been making it and playing with it ever since. It got to the point that their friends, both school and family, were begging them to make these several times a year for various occasions. At times they, and I, have made a lot of variations to the basic cookie. Most often it was some variant on small chocolate candies, chocolate or butterscotch chips, and / or some type of nuts. We found some fairly unusual (sometimes "strange") chips in the stores near the holidays. Rarely, and only for a Very Dear Friend, it was every chip we could find and whatever nuts were available. It almost overwhelmed the basic cookie!

Not long ago my youngest got a new (to us) twist going and added ground Ginger, Orange extract and Rum extract. All in the perfect amounts to enough to have the flavors sort of ghost their ways through your senses. IT IS DELICIOUS!!!!

The only thing my kids haven't told me they have tried is adding finely chopped chilies. What Can I say, one of the kids moved to New Mexico and they seem to like chilies in and on nearly everything.

This is the first time I have ever seen this recipe with any sort of glaze or frosting recipe alongside of it. Guess it's about time to try another variant!

LIBBYS, THANK YOU For Posting this recipe, both here and on your home site! My family once Lost Our copy and had forgotten just enough detail to be unable to make them again until we managed to find the recipe once more! Now I know we will never completely loose it because it is HERE ! ! ! What a Great relief!

My pumpkin cookies just came out of oven. Yum! They are very soft and moist. My 10 year old son says this recipe is a keeper! So thank you for sharing it. Will be making more! I did substitute a half cup of white for brown sugar and added pumpkin pie spice.

An excellent recipe, didn't use the glaze. Used the rest of the can for a batch of pumpkin oatmeal cookies and pumpkin biscotti.

My best friend is obsessed with these cookies. I've made them every year for the last four years as her Christmas gift. I replace the glaze with cream cheese frosting, and they're perfect. Never had a bad complaint about these cookies, :)

Very easy and tasty. It's probably my lack of organization, but it took me about 45 minutes to put everything together and not 10 minutes like the recipe states. I made these for a tailgating party and they were well received.

Didn't have time to make cookies so put it in a 9x13 pan. Made a streusel for topping. Basically a good recipe, although very dense. Next time will substitute allspice for nutmeg, try 1/2 white & 1/2 brown sugars as suggested, and bake in a 10x15 jelly roll pan.

Yum these cookies taste great and are soft, but still hearty. I added chocolate chips and white chocolate morsels to some and oatmeal and dates to others. Great easy to follow recipe.

Instead of using a glaze, I inserted three milk choclate chips into the top of the cookie before baking. They were a hit. Nice and moist and flavorful.
