RON HILL'S CINNAMON CHEESECAKE 
9 1/2 inch spring form pan
10 rectangles of graham crackers, finely crushed
1/2 c. melted butter
1/4 c. sugar
2 (8 oz.) pkg. light cream cheese, softened
1/2 c. sugar
3 eggs or 3/4 c. Egg Beaters

Beat cream cheese until fluffy. Add sugar and eggs. Beat until very smooth. Pour over crust. Bake at 350 degrees 15 to 25 minutes until firm in center.

TOPPING:

1 1/2 c. (12 oz.) light sour cream
1 c. sugar
1 tsp. vanilla
1/2 tsp. cinnamon

Combine all ingredients and beat until smooth. Pour over cake and smooth out evenly. Bake 10 minutes at 350 degrees until set. Allow to cool at room temperature, then refrigerate.
