GOOD LUCK BEAN SOUP 
1/4 c. split peas
1/4 c. black eyed peas
1/4 c. Great Northern beans
1/4 c. navy beans
1 c. small red beans
1/4 c. pinto beans
1/4 c. lentils

To prepare: wash bean mixture. Cover with water, add 2 tablespoon salt and soak overnight. Drain. Wash a couple more times. Put beans in water to cover. Add ham or ham hock. Cut a large onion in quarters, add and simmer slowly with beans for 2 1/2 to 3 hours or until beans are tender. Add:

1 lg. can of tomatoes
1 lg. pod red pepper, optional or 1 tsp. chili powder
1 clove of garlic, minced
Juice of 1 lemon
Salt and pepper to taste

Simmer 10 minutes more. Serve with crackers, cornbread or crusty bread.
