NORTHERN BAKED BEANS 
1 lb. yellow-eye beans
1/2 tsp. dry mustard
2/3 c. light brown sugar (use part maple syrup if desired)
1/2 lb. lean salt pork

Sort beans; pick out stones. Soak in cold water 1 hour. Discard water and rinse 2-3 times. Cover with water and cook on top of stove 1 hour. Add water as needed.

Mix all ingredients in bowl and bake at 350 degrees about 4 hours. Add water as needed and stir each time. Bake uncovered until soft. Add more sugar or syrup to taste.
