BAKED BRISKET 
4-5 lb. brisket

Put on aluminum foil large enough to wrap well. Rub well with salt and pepper. Bring foil up around meat loosely and fold ends over to enclose all juices. Bake at 350 degrees for 2 hours. Heavy duty foil is best or 2 layers of regular foil will work. Reduce heat to 300 degrees.

Loosen foil and pour off excess grease. Then pour over it the following sauce and bake an additional 4 hours or until tender. Enclose again in foil.

SAUCE:

1 c. tomato catsup
6 dashes Worcestershire sauce
4 dashes each: soy sauce & Tabasco
2 tbsp. vinegar
2 tbsp. brown sugar
1/4 c. hickory smoke barbecue sauce
