LECSO (LEH-CHOH) 
1 green bell pepper
1 sweet red pepper (if available)
1 yellow pepper (if available)
1 white onion, medium
2 tbsp. olive oil
2 to 3 tomatoes, peeled and seeded, chopped 1 inch chunks
2 (6 to 8 inch) Polish sausages
2 to 3 tsp. Hungarian paprika
Salt and pepper to taste

Simmer sausages until cooked through. Drain and cut into 1/2 inch slices.

Core and cut 2 to 3 peppers into 1 inch chunks. Chop onion fairly small and saute in olive oil; do NOT brown. When soft, add the peppers and stir until al dente. Add tomatoes and sausage slices. Sprinkle liberally with paprika. Stir until heated through. Do not cover pan. Serves 2 to 3.
