SPINACH PIE QUICHE 
1 pkg. frozen chopped spinach
1 (3 oz.) cream cheese
2 eggs
1 can sliced mushrooms
1 c. half & half
1 onion, sauteed in 4 tbsp. butter
Salt and pepper to taste
Pinch tarragon

Thaw spinach. Soften cream cheese. Brown onion. Beat eggs. Mix eggs and cream cheese with half and half. Add spinach, onion, drained mushrooms and seasonings. Put in prepared 9 inch pie shell. Bake about 1/2 hour in 350 degree oven. Serve immediately.
