BAKED EGGPLANT | |
1 medium sized eggplant Miracle Whip or mayonnaise 1/2 c. cornflake crumbs 1/4 c. dry Parmesan cheese salt and pepper, to taste Peel and slice eggplant 1/2-inch thick. Spread each side of each slice with mayonnaise. Coat it with the cornflake crumbs and Parmesan cheese which have been mixed together. Bake in a buttered baking dish or cookie sheet. Bake in an oven preheated to 425°F for 15 minutes. Turn slices over and bake about 5 minutes more. Serve hot. Submitted by: Elaine Dietrich |
